PRO TIP: Unlike butter, you can’t take a short cut here by using the microwave. That will ruin the texture of the brie, so just be patient for about half an hour while the brie comes to room temperature.
Next up, add the cut up brie to your food processor and pulse it until the cheese is smooth. This usually takes about 5 minutes.
Add the whipped brie to the serving dish. We like to use a shallow bowl that will keep the toppings in, but not require deep scoops when dipping.

Ingredients
- 2 wheels of brie, 8 ounces each
- 3 tbsp apricot jam
- ¼ cup toasted pumpkin seeds
- 1 bag of Sweet Chili OMG! Pretzels
Instructions
- Remove the rind from the cold brie cheese and cut into cubes. Allow the cheese to come to room temperature, about 30 minutes. PRO TIP: When you cut the cheese, put a piece of parchment paper underneath so that the brie will be easier to move once it softens.
- Place the room temperature brie in the bowl of a food processor and pulse until smooth, about 5 minutes.
- Spread the whipped brie in a shallow bowl or plate with a high edge. Spread the top with the back of a spoon or rubber spatula until it is smooth and has a nice presentation.
- Top the whipped brie with jam and sprinkle on the toasted pumpkin seeds.
- Serve with Sweet Chili seasoned pretzel nuggets for dipping.
