  • Start by grating the cheese. You can use a box grater or a food processor. 
  • Chop the shallot (and other veggies you might be using) and drain the pimentos. 
  • Add the mayo, cheese, shallot and pimentos to a large bowl and combine. 
  • Add in the spices and stir again.

Ingredients
  

  • 2 cups Sharp Cheddar cheese, shredded
  • 2 cups Monterey Jack cheese, shredded
  • 4 ounce jar diced pimentos
  • 1 tbsp hot sauce
  • 1 shallot, diced
  • 1 cup mayonnaise
  • 1 tsp paprika
  • Salt and pepper, to taste
  • 1 bag Garlic OMG! Pretzels

Instructions
 

  • Shred both the cheddar and jack cheeses with a box grater or food processor.
  • In a large bowl, combine the cheeses with the pimentos, shallot and mayonnaise.
  • Add in the hot sauce, salt, pepper and paprika. Stir until well combined.
    PRO TIP: You can also add some more hot sauce at this stage if you prefer your pimento cheese dip a little spicier.
