Prep your ingredients. Boil your lasagna noodles, cool them and cut them. Make the ricotta cheese mixture. Shred your mozzarella cheese. Slice your veggies.
Gather all of your ingredients. We like to set up a prep station with the muffin tin at the center so that everything you need to layer your muffin cup lasagna is easy to reach.
Layer your muffin cup lasagna. Start with sauce, then add a noodle, cheese mixture, veggie, cheese and so on.
Put your lasagna cups in the oven to bake.
Add your crunchy pretzel topping to each lasagna cup and return to the oven for a few minutes.

Lasagna Cups with Crunchy Pretzel Topping
Ingredients
- 12 lasagna noodles
- 1¼ cups whole milk ricotta cheese
- 1 garlic clove, minced
- 2 tsp dried oregano
- 2 tsp dried parsley
- 1 tsp dried basil
- ½ tsp salt
- ¼ tsp pepper
- 2 eggs
- 1 cup shredded mozzarella cheese
- 1 zucchini, cut into strips
- 1 jar marinara sauce
- ¼ cup Garlic OMG! Pretzels, crushed
Instructions
- Bring water to a boil. Cook lasagna noodles to box instructions. Drain with cold water and drizzle with olive oil.
- Preheat oven to 350 degrees.
- Combine ricotta, garlic, spices and eggs in a medium bowl.
- Cut zucchini into thin strips and set aside.
- Cut each lasagna noodle in thirds.
- Layer the lasagna cups - sauce, noodle, ricotta, zucchini, mozzarella, sauce - until the cups are full. Then, add a noodle, sauce and cheese to the top.
- Once all the lasagna cups are made, place the tin in the oven and bake for 20 minutes or until warmed through.
- Add the OMG! Pretzels for a crunchy topping and return to the oven for about 3 minutes.
- Serve with a side salad and enjoy!
