Fall Salad – Autumn Harvest Apples, Goat Cheese and Chicken

Fall salad ideas are full of the season’s best produce like apples, butternut squash, cranberries, sweet potatoes and kale. To make fall salad more filling, we like to add protein. And, to make it more delicious, we like to add crunch from our seasoned sourdough pretzel nuggets.

We know that when you are feeding the people you love, you want to give them the best. That’s why using the best ingredients in our recipes is so important to us. The things to focus on when making fall salad are:

The fall produce. Choose fresh and seasonal ingredients when you can. Apples are great in fall salad ideas because they add sweetness and crunch. A hearty base like kale is healthy and pairs well with the other flavors in this fall salad.

The dressing. Make your own when you can to control the amount of salt and ingredients used. If you don’t have time to make your own dressing for fall salad ideas, opt for a store-bought one that has just a few ingredients and nothing artificial. 

The crunchy salad toppers. No fall salad is complete without something crunchy on top. You can opt for nuts or tortilla strips, but we like to use OMG! Pretzels. For this fall salad recipe, we chose our flagship Garlic variety, but any of our savory flavors will work as proutons.

How to Make Fall Salad

  1. Cook the chicken. You can keep this simple and grill or roast a few chicken breasts. Once they are fully cooled, cut the chicken into cubes. 
  2. Prep your produce. Make sure everything for your fall salad is washed and dried. Then, chop everything to your liking. 
  3. Make the dressing. For this fall salad idea, we wanted a simple balsamic vinaigrette. Simply combine 4 tbsp olive oil with 2 tbsp balsamic vinegar, then add a pinch each of dried oregano, parsley, basil, salt and pepper. 
  4. Layer the fall salad. Start with the kale base. Then, add crumbles of goat cheese, chopped apples, and chicken. Drizzle on the dressing and add Garlic OMG! Pretzels for a crunchy salad topper.
  5. Enjoy!

Ingredients
  

  • 2 6 ounce chicken breasts
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 10 ounces 10 ounces shredded kale
  • 1 fall apple
  • 3 ounces goat cheese, crumbled
  • 4 tbsp balsamic vinaigrette dressing
  • ½ cup Garlic OMG! Pretzels

Instructions
 

  • Preheat the oven to 350.
  • Drizzle chicken breasts with olive oil and season with salt and pepper. You can also add some dried herbs like thyme if you want.
    PRO TIP: If you have a grill, grill the chicken to add more flavor to this fall salad.
  • Wash, dry and chop the produce. Place in a large bowl.
  • Once the chicken is cooked, let it cool completely and then chop it into bite size pieces.
    PRO TIP: Make this step part of your fall salad meal prep schedule to save time when you’re ready to eat lunch.
  • Top the fall salad with crumbled goat cheese and chicken.
  • Drizzle on the dressing and toss.
    PRO TIP: If you’re taking this fall salad to the office, pack 2 tbsp of the dressing on the side and toss right before you eat.
  • Put in a serving bowl and top with Garlic OMG! Pretzels.
