Eggplant Roll-Ups
Light, tasty and ready in the oven in 30 minutes! These skewers of eggplant with ham and cheese will be perfect for a quick family dinner or serve them as a hearty appetizer!
Equipment
- 1 Pastry brush
- 1 Sheet pan
- 1 food processor
Ingredients
- 2 eggplants
- 1 package OMG! Garlic Pretzels
- 1 cip Parmesan cheese grated
- 1 tsp dried oregano
- ยฝ tsp salt
- 1 cup extra virgin olive oil
- ยฝ lb prosciutto
- ยฝ lb smoked Gouda sliced
Instructions
- Preheat the oven to 350 degrees. Meanwhile, soak toothpicks or skewers in warm water (so they donโt burn in the oven).
- Wash the eggplants and cut them into slices lengthwise. Pat to dry.
- Grind OMG! Garlic Pretzels in a food processor until fine and combine with Parmesan cheese, dried oregano, and salt.
- Brush the oil on both sides of the eggplant slices and press the OMG! Garlic Pretzels mix onto both sides.
- Place the breaded eggplant on a sheet pan sprayed with cooking spray (or brushed with olive oil). Bake at 350 degrees for 15 minutes. Remove from the oven. NOTE: Do not turn the oven off - youโll need it again in a minute!
- Place a slice of prosciutto and cheese on the eggplant and roll them up, pinwheel style (lengthwise). Skewer each roll with a toothpick OR four rolls on a long skewer.
- Transfer the skewers to the baking tray, drizzle with olive oil and bake in the oven for another 15 minutes.
- Serve and enjoy!
