Light, tasty and ready in the oven in 30 minutes! These skewers of eggplant with ham and cheese will be perfect for a quick family dinner or serve them as a hearty appetizer!
Preheat the oven to 350 degrees. Meanwhile, soak toothpicks or skewers in warm water (so they don’t burn in the oven).
Wash the eggplants and cut them into slices lengthwise. Pat to dry.
Grind OMG! Garlic Pretzels in a food processor until fine and combine with Parmesan cheese, dried oregano, and salt.
Brush the oil on both sides of the eggplant slices and press the OMG! Garlic Pretzels mix onto both sides.
Place the breaded eggplant on a sheet pan sprayed with cooking spray (or brushed with olive oil). Bake at 350 degrees for 15 minutes. Remove from the oven. NOTE: Do not turn the oven off - you’ll need it again in a minute!
Place a slice of prosciutto and cheese on the eggplant and roll them up, pinwheel style (lengthwise). Skewer each roll with a toothpick OR four rolls on a long skewer.
Transfer the skewers to the baking tray, drizzle with olive oil and bake in the oven for another 15 minutes.
