Lemon, Raspberry, Sweet Chili Pretzel Ice Cream Cupcakes
While the kiddos are enjoying traditional flavors like vanilla and chocolate, amp up the flavor with these sophisticated ice cream treats. The combination of bright lemon with the punch of spice from the Sweet Chili OMG! Pretzels is unexpected and truly delicious. The fresh raspberries lend a fun texture to the treats, as well as gorgeous color.
Ingredients
- 1 pint lemon ice cream (or sorbet if you want to make it dairy free)
- ½ cup fresh raspberries, plus a dozen
- 2 cup OMG! Sweet Chili Pretzels, crushed, plus a dozen whole nuggets
Instructions
- Let your ice cream thaw until it’s soft enough to work with, about 15 minutes.
- While the ice cream softens, prep your cupcake liners by placing them on a sheet pan and adding a spoonful of crushed OMG! Sweet Chili Pretzels to each one.
- In a medium bowl, combine ice cream and raspberries. It’s fine if the berries break up a bit. The color combination is pretty and then you’ll get some fruit in each bite.
- In layers, spoon in the ice cream mixture, pretzels and so on until your liners are full. Be sure to add a pretzel nugget, along with a whole fresh raspberry to the top for garnish.
- Place in the freezer until set, about 2 hours. Unmold the “cupcakes” and serve.
