1 lb ground turkey 1 onion, diced 2 bell peppers, diced 1 tbsp brown sugar 2 tbsp olive oil Salt and pepper to taste 2 tbsp chili powder 2 tsp ground cumin 1 tsp dried oregano 1 tsp paprika 1 can each of black and red beans 15 ounces canned tomato sauce or diced tomatoes 2.5 cups chicken or vegetable stock Toppings (optional): Shredded cheese Scallions Sour cream Buffalo OMG! Pretzels
Dice onion and peppers. Rinse beans.
Saute onions in olive oil on low heat with a sprinkle of salt until soft; about 5 minutes.
Add brown sugar and cook for 2 minutes.
Add ground turkey and cook until browned.
Add spice mix and cook for 2 minutes.
Add peppers, beans, tomato sauce and stock. Cover and simmer for at least 45 minutes and up to 2 hours.
