Instructions
Prep the walking taco bags by cutting off the tops.
Prep the area where you will set up the walking taco bar with bowls to toppings, napkins, silverware, etc.
Chop the toppings and store in the refrigerator until ready to serve.
Make the filling. Warm the oil over low heat in a heavy pot with a lid and add the onion, cook until tender, about 5 minutes. Increase the heat to medium and add the ground meat; cook for about 10 minutes, breaking up the meat as you stir. Add the poblano, chili powder, cumin and salt/pepper; combine. Add the crushed tomatoes and water. Decrease heat to low and simmer for about 10 minutes with the lid on.NOTE: You want this to be warm when you serve it, so make it about 15 minutes before guests arrive. That way, you can leave the pot on low simmer and just move it to the walking taco bar when it’s time to eat.
Place the prepped toppings into the bowls on the walking taco bar and then add the walking taco bags and warm filling in the pot to the set up.
Invite guests to build their own walking tacos and enjoy!
